Chef Richard Green, Executive Chef at Rosewood Corniche, Saudi Arabia’s leading hotel, has concocted a sumptuous food festival celebrating the cuisine of the Pacific Rim at the hotel’s international Habsburg restaurant.
Jeddah’s residents striving for a summer escape will look no further than Rosewood Corniche which is bringing a taste of the Pacific Rim region to the Red Sea. Famous for their crystal clear waters, silky white sand and breathtaking sunsets, countries and islands located on the edge of the Pacific Ocean also offer a great diversity of exotic and mouth-watering cuisine.
Guests will be welcomed with a variety of beverages from the region as they take in the glamorously decorated Habsburg restaurant, topped off by panoramic views of the Red Sea. Diners will be able to sample food from six main stations representing Singapore, Fiji, Hawaii, Thailand, Peru and Japan.
And everyone who dines at the festival will be entered into a grand draw to win two business class flights from Jeddah to Singapore, courtesy of Singapore Airlines.
Throughout the festival, which runs from 13 to 23 July and opens from 7:30pm to 11:30pm, diners can enjoy live cooking displays and authentic food from each country with menus changing on a daily basis for only SAR140, exclusive of 15 per cent service charge.
“The Pacific Rim offers a real culinary and informative experience which will take our guests for a wonderful journey to explore new flavours,” said Richard Green, Executive Chef at Rosewood Corniche.
“Each of the six stations will be beautifully decorated featuring national artifacts and video displays; chefs will be wearing traditional outfits while demonstrating to diners the typical cooking methods and explaining the different preparation steps.” added Chef Green.
The Fiji station will be designed and built as a tropical island with a ‘bure’, a traditional Fijian beach hut; dishes will include breadfruit, yam, cassava, taro root and leaves, beef, poultry and seafood. Ingredients such as garlic, ginger, turmeric, coriander, fenugreek, cumin and chilli are typically used in Fijian cuisine. For dessert, exotic fruits such as lime, guava, mango, bananas and pineapple will be served alongside a delicious banana cassava cake.
The Hawaii station will offer a savoury beach buffet setting featuring the island’s most delightful dishes including ‘lau-lau’, an authentic Hawaiian entrée, ‘poke’, a raw fish salad flavoured with soy sauce, sesame oil, kukui nut, and seaweed, and ‘loco-moco’, the famous and irresistible high-carb, high-protein Hawaiian dish which was originally invented to sate surfers’ hearty appetites.
Thailand, Singapore, Peru and Japan stations will look just as impressive. While Thailand will take the form of a fishing village and feature small barbecues, Singapore will feature live noodle making demonstrations as well as illustrating its diverse cultural mix and the influences their cuisine has had from Britain, Malaysia, China, India and Peranaka. Enjoying good food is one of the country’s favourite past times and Habsburg diners will feel just as if they were flown to the island.
Shaped into a traditional village, the Peru station will include a mouthwatering chocolate fountain to illustrate the country’s significant cocoa export while Japan will have water features, a sushi cabinet, bamboo and Japanese artifacts.

The Pacific Rim food festival will also host Rosewood Corniche’s famous Friday Brunch on 16 and 23 July, open from 12:00noon. The most exotic brunch in Jeddah costs SAR140 plus 15 per cent service charge.
